Why is Google Camera not compatible with most devices?

Google camera is compatible with most devices; however, the application on the play store will only work with Google devices. How well it works depends on the device with which you are working, and you have to load many workarounds to make it work smoothly.

All camera-enabled devices come with their application for the camera, so, of course, the manufacturer would like you to use their app. Your device has to be equipped with the features that are necessary for this program to work. Also, in the beginning, the application was supported on most android devices but now is only “officially” supported on Google pixel devices.
