The main difference between the two is their source. Agar is said to have come from vegetables, while the gelatin comes from the collagen found in the bones of different animals.

Aside from desserts, Agar can be used to conduct different tests that may be related to the medical field, while gelatin can also be used in photography and even cosmetics. The way that these two are cooked is also different. Agar needs to be boiled while gelatin just needs to be placed in warm liquid so that it will set and take shape.
