Ravioli is made from wheat flour. Joshpara is a kind of dumpling, although similar to ravioli in that it is cut into pieces then folded to make squares as is the case with ravioli. Joshpara look like little hats whereas ravioli is more like little parcels.

You cook ravioli in fast boiling water or broth made from meat bones. Joshpara is typically cooked in yoghurt. It originated in pre-Islamic Persia and is a middle Eastern dish rather than European.
