There are basically two types of confectionery products – sugar and baked. Sugar confectionery items include mostly snack items such as candies, gums, lollipops, candy bars, chocolate, cotton candy and other sweet items. Baked confectionery items include mostly flour confections such as sweet pastries, cakes, cinnamon rolls, and similar baked goods.

There are many sweet dishes that are neither sugar nor flour based and therefore would not be considered confectionery products. For example, recipes made with nut butter, honey, fresh or frozen fruit, ice cream, mousse, or honey just to name a few.
