The question is not properly asked. If sommelier opens a bottle, he/she must smell the cork and taste small quantity of wine to make sure that the wine is not spoiled in any way. So the question should be: Why sommelier smell the cork.

During a wine service, you dont need to smell the cork. You inspect the cork to see if its wet, which means the wine has been stored properly.
