Why do cakes and bread go hard, but biscuits go soft when left out in the air?

Breads and cakes are moist and soft because they have water content in them. When they are left in the open, they come in contact with air which is dry and has less moisture. Consequently the moisture escapes into the air from the cakes and the breads, making them hard.

Biscuits on the other hand are hard because they have very less water content. On coming in contact with humid air, moisture seeps into the biscuits making them soft.
