What are the correct steps for making a flaky or mealy dough by hand?



A. Sift the flour onto a work surface or into a large bowl.
B. Cut the fat into the flour.
C. Cream softened butter and sugar.
D. Dissolve salt and sugar (if using) in cold water. Add the mixture to the flour, mixing gently until the dough holds together. Do not overmix.
E. Slowly add eggs, blending well.
F. Cover the dough with plastic wrap and chill thoroughly before using.

Cover the dough with plastic wrap and chill thoroughly before using.

Eggs are generally used in sweet tart doughs to make them more firm. Flaky and mealy doughs have fats CUT into the flour to create that flaky texture.
