Why couldn't this be lipolysis? Both sketchymedical AND first aid mention it as functions of Beta-2...

Because even though Epinephrine works on b-receptors at low levels and a-receptors predominantly at high levels, there's always some activity/effect on them regardless of the levels of epinephrine used; inhibition of lipolysis is achieved through catecholamine activation of a2 (which decreases NET effect of the increased lipolysis of b2 activation - basically partially cancelling each other out). Uterine tone doesn't have such thing - Epinephrine b-receptor activation reduces uterine tone without it acting on other receptors that would increase it - which makes it the more correct answer
