Two of the most used kitchen oils are vegetable oil and olive oil. Many people just choose the oil that is available in their market without knowing the nutritional value. Vegetable oil is advisable in frying as it can sustain high cooking temperature. Olive oil, on the other hand, is best used as a salad dressing or for cooking at medium temperature. Most vegetable oils are said to be healthy to consume by people with diabetes and with blood pressure problems. Vegetable oil is thinner and lighter than olive oil thus it does not have flavor.

Olive oil, on the other hand, has a thick consistency and has flavor. Some people also do not suggest using olive oil as cooking oil as it will be losing its nutrients when heated. That is why olive oil is used as a salad dressing.
