Soup almost always tastes better the next day and there's a reason. The ingredients are allowed to marinate for longer and they compliment one another. The pepper used penetrates into the meat and vegetables and the milk sauce becomes thicker and more pronounced. The meat and the vegetables also grow more tender. Spices blossom overnight.

Soup can be prepared a day ahead before eating. Simple chill overnight and reheat the next day. Or, you can always have soup a second time because no one seems to mind that. When cooking soup for company, it is nice to have it already made. Not only will it taste better, it will take some stress out of having to have everything cooked and ready for your guests. Plus, you'll get a do over if you mess it up.
