Maitotoxin has a chemical formula of C164H256O68S2Na2, while palytoxin has a chemical formula of C129H223N3O54. Palytoxin has a molar mass of 2680.1386 grams per mole, and maitotoxin has a molar mass of 3422 grams per mol. Maitotoxin also referred to as MTX and is a very potent toxin that is produced from a dinoflagellate species called gambierdiscus toxicus.

Maitotoxin increases the level of cytosolic Ca²+ ions by activating the channels of extracellular calcium. The molecule is a system of thirty-two fused rings itself. Maitotoxin includes 22 methyl groups, two esters of sulfuric acid, 32 ether rings, and 28 hydroxyl groups. It also has an amphipathic structure. Considering palytoxin, it has a metallic odor with a white amorphous hygroscopic solid appearance. The melting point of palytoxin is at 300°c, though it is very soluble in dimethyl sulfoxide, pyridine, and water.

Maitotoxin usually activates the channels of extracellular calcium, which leads to an increase in the high rate of cytosolic calcium ions.

This compound is easily notable, as it is one of the most complex and largest non-polysaccharide and non-protein molecules that an organism has ever produced.
