In the world there are over nine hundred different kinds of cheeses in the world. In France alone, they claim four hundred of those kinds of cheeses. France is known for cheese and producing it. Therefore, it is not surprising they would have almost half of the world’s cheeses. Cheese is made of milk and other flavors.

Also, different types of milk can be used to make the different types of flavors in cheese. Cheeses can be categorized as soft or hard cheese depending upon the amount of moisture it has in it. Obviously, the harder cheeses have less moisture. Also, cheeses are categorized based on their ages. Even though cheese is manmade, people want it to taste naturally and not processed.

There are thousands of types of cheese in shops and markets around the world. There are semi-soft cheeses, semi-hard cheeses, and fresh cheese, such as goat cheese, ricotta, and mascarpone. There are many types blue cheese and asiago cheese and there is the fancy washed rind cheese. These are the "stinky" cheeses, which ripen from the outside in and are not mild.

This includes brie, which is often served slightly melted or baked in a round dish and topped with nuts or fruit.
